Idlis are healthy and we all love it. So what do you do if you have yesterdays leftover idlis lying in the fridge? Well here's a easy and fun recipe to spice up your idlis and give them a completely different texture!

Ingredients:
Idlis - left over, cut in fours
2 green chilies, finely chopped
A little ginger, grated
1 onion, finely chopped
1 large tomato, finely chopped
1 tbsp coriander leaves, finely chopped
1/4 tsp turmeric powder
1/2 tsp red chilli powder
1 tsp coriander powder
½ tsp pinch of gun powder
1/2 tbsp lemon juice
1 tbsp oil
Salt to taste
1 tsp mustard seeds
12-15 curry leaves

Method:

-Heat oil in a big vessel, add the mustard seeds and let them splutter then add the curry leaves and saute for 5 minutes and add the green chilies and ginge, saute for few seconds and add the chopped onions till they change their color.

-Now add the turmeric powder, red chili, coriander and gun powder powder. Mix well.

-Once the spices are combined together add the chopped tomatoes and saute till the oil separates on low flame.

-Then add the idlis and mix well till all the idli pieces are a little crisp.

-Add lemon juice and mix and garnish with chopped coriander leaves. Serve warm.
